No-Bake Berry Cheesecake


INGREDIENTS
  • FOR CRUST:
  • 1 1/2 sticks soft butter
  • 1/2 cup granulated sugar
  • 1 1/2 cups all purpose flour
  • 1/4 cup cornstarch 
  • FOR FRUIT FILLING:
  • 2 cups berries (fresh or frozen)
  • 1/2 cup sugar
  • 2 tablespoons cornstarch 
  • 1/2 cup water
  • 1 teaspoon lemon juice
  • FOR CREAM CHEESE FILLING:
  • 2 packages cream cheese
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 3/4 cup whipping cream


DIRECTIONS

TO MAKE CRUST

  • Preheat oven to 325 degrees F. 
  • Grease the bottom and sides of a pie dish. Set aside.
  • Place butter and sugar in a medium bowl and beat with an electric handheld mixer until smooth. Add flour and cornstarch and mix until combined (it will look crumbly). 
  • Press dough into pan and bake for 40-45 minutes. Let cool completely.

TO MAKE FRUIT FILLING

  • Combine berries, sugar, cornstarch, water, and lemon juice in a saucepan and cook on medium heat. 
  • Stirring frequently, cook until it thickens. 
  • Remove from heat and let cool completely.

TO MAKE CHEESECAKE FILLING

  • Cream together cream cheese and sugar. 
  • Add salt and vanilla and beat.
  • Fold in cooled fruit filling.
  • Whip cream in a separate bowl until stiff peaks form.
  • Fold whipped cream into cream cheese mixture.
  • Spread filling evenly over cooled crust. Cover and refrigerate overnight.
