INGREDIENTS
- FOR CRUST:
- 1 1/2 sticks soft butter
- 1/2 cup granulated sugar
- 1 1/2 cups all purpose flour
- 1/4 cup cornstarch
- FOR FRUIT FILLING:
- 2 cups berries (fresh or frozen)
- 1/2 cup sugar
- 2 tablespoons cornstarch
- 1/2 cup water
- 1 teaspoon lemon juice
- FOR CREAM CHEESE FILLING:
- 2 packages cream cheese
- 1/2 cup granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 3/4 cup whipping cream
DIRECTIONS
TO MAKE CRUST
- Preheat oven to 325 degrees F.
- Grease the bottom and sides of a pie dish. Set aside.
- Place butter and sugar in a medium bowl and beat with an electric handheld mixer until smooth. Add flour and cornstarch and mix until combined (it will look crumbly).
- Press dough into pan and bake for 40-45 minutes. Let cool completely.
TO MAKE FRUIT FILLING
- Combine berries, sugar, cornstarch, water, and lemon juice in a saucepan and cook on medium heat.
- Stirring frequently, cook until it thickens.
- Remove from heat and let cool completely.
TO MAKE CHEESECAKE FILLING
- Cream together cream cheese and sugar.
- Add salt and vanilla and beat.
- Fold in cooled fruit filling.
- Whip cream in a separate bowl until stiff peaks form.
- Fold whipped cream into cream cheese mixture.
- Spread filling evenly over cooled crust. Cover and refrigerate overnight.
