COCONUT MUFFINS
Ingredients
- 2 cups all purpose flour
- 1 Tbsp baking powder
- 1/2 tsp salt
- 1/2 cup melted butter
- 1/2 cup coconut milk (well shaken)
- 1 cup granulated sugar
- 2 eggs (room temperature)
- 1 tsp vanilla extract
- 1 tsp coconut extract
- 1 cup sweetened shredded coconut
Directions
- Combine the flour, baking powder, and salt in a bowl. Set aside.
- In a separate bowl, whisk together butter, coconut milk, sugar, eggs, and both extracts.
- Add dry to wet and stir with a wooden spoon to combine.
- Fold in shredded coconut.
- Let the batter sit. While it sits, preheat oven to 425 degrees F.
- Once the oven is up to temp, grease 12 muffin cups and evenly distribute muffin batter into cups (They will be very full).
- Bake for 5 minutes then reduce oven temperature to 375 degrees F. Bake for 10 minutes more.
- Remove from oven and let cool for 5 minutes then transfer muffins to a wire rack to finish cooling.

I’ve always been looking for a good coconut bread or muffin recipe and I finally found it! Recipe was easy and they came out looking just like the picture!
