Coconut Muffins

 


COCONUT MUFFINS

Ingredients 

  • 2 cups all purpose flour
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup melted butter
  • 1/2 cup coconut milk (well shaken)
  • 1 cup granulated sugar
  • 2 eggs (room temperature)
  • 1 tsp vanilla extract 
  • 1 tsp coconut extract 
  • 1 cup sweetened shredded coconut


Directions 

  • Combine the flour, baking powder, and salt in a bowl. Set aside.
  • In a separate bowl, whisk together butter, coconut milk, sugar, eggs, and both extracts.
  • Add dry to wet and stir with a wooden spoon to combine.
  • Fold in shredded coconut.
  • Let the batter sit. While it sits, preheat oven to 425 degrees F.
  • Once the oven is up to temp, grease 12 muffin cups and evenly distribute muffin batter into cups (They will be very full).
  • Bake for 5 minutes then reduce oven temperature to 375 degrees F. Bake for 10 minutes more.
  • Remove from oven and let cool for 5 minutes then transfer muffins to a wire rack to finish cooling.
  • Enjoy!

  1. I’ve always been looking for a good coconut bread or muffin recipe and I finally found it! Recipe was easy and they came out looking just like the picture!
