Soft and Fluffy Lime Scones

 



Lime Scones
Makes 8-10 scones

Ingredients

  • For scones
  • 1/4 cup granulated sugar
  • 1 Tbsp lime zest
  • 3 cups flour
  • 3 Tbsp cornstarch 
  • 1/2 tsp salt
  • 1 Tbsp baking powder 
  • 4 oz cream cheese (cold)
  • 1/2 cup butter (cold)
  • 1/2 cup milk (cold)
  • 1 egg
  • 1 Tbsp vanilla extract 
  • 2 Tbsp lime juice
  • For glaze
  • 1 cup powdered sugar
  • 2 Tbsp lime juice
  • 1 Tbsp lime zest
  • 1-2 tsp milk (if necessary)

Directions

  • Preheat oven to 425 degrees F. and line a baking sheet with parchment paper.
  • Mix sugar and zest together with your fingers until well combined.
  • Whisk flour, salt, and baking powder with sugar and zest. Set aside.
  • Put cream cheese and butter in a food processor or blender and pulse a couple times.
  • Add dry ingredients and pulse to combine.
  • Add egg, milk, lime juice, and vanilla and pulse until dough forms.
  • On a well floured surface, shape dough into 1/2" thick circle or square and cut into 8-10 triangles.
  • Place on baking sheet and bake for 15 mins.
  • Let cool for 15 minutes then prepare the glaze.
  • Combine powdered sugar, lime juice and zest in a bowl and stir until smooth. Add milk if glaze is too thick.
  • Dip the top of each scone in the glaze and place on a wire rack until glaze is set.

  1. I don’t really like scones but decided to make some for the family and they were a hit! Everybody enjoyed them, including me!
