Lime Scones
Makes 8-10 scones
Ingredients
- For scones
- 1/4 cup granulated sugar
- 1 Tbsp lime zest
- 3 cups flour
- 3 Tbsp cornstarch
- 1/2 tsp salt
- 1 Tbsp baking powder
- 4 oz cream cheese (cold)
- 1/2 cup butter (cold)
- 1/2 cup milk (cold)
- 1 egg
- 1 Tbsp vanilla extract
- 2 Tbsp lime juice
- For glaze
- 1 cup powdered sugar
- 2 Tbsp lime juice
- 1 Tbsp lime zest
- 1-2 tsp milk (if necessary)
Directions
- Preheat oven to 425 degrees F. and line a baking sheet with parchment paper.
- Mix sugar and zest together with your fingers until well combined.
- Whisk flour, salt, and baking powder with sugar and zest. Set aside.
- Put cream cheese and butter in a food processor or blender and pulse a couple times.
- Add dry ingredients and pulse to combine.
- Add egg, milk, lime juice, and vanilla and pulse until dough forms.
- On a well floured surface, shape dough into 1/2" thick circle or square and cut into 8-10 triangles.
- Place on baking sheet and bake for 15 mins.
- Let cool for 15 minutes then prepare the glaze.
- Combine powdered sugar, lime juice and zest in a bowl and stir until smooth. Add milk if glaze is too thick.
- Dip the top of each scone in the glaze and place on a wire rack until glaze is set.

I don’t really like scones but decided to make some for the family and they were a hit! Everybody enjoyed them, including me!
