Key Lime Pie
Ingredients
- For graham cracker crust
- 2 cups graham cracker crumbs (16 sheets)
- 6 Tbsp butter (melted)
- Pinch of salt
- For filling
- 3 egg yolks
- 14 oz sweetened condensed milk
- 1/2 cup plain greek yogurt
- 3/4 cup key lime juice (or regular lime juice)
- 1 Tbsp lime zest
Directions
- Preheat oven to 325 degrees F.
- Crush graham crackers into fine crumbs and mix in a bowl with melted butter and salt until well combined.
- Press crumbs into a 9” pie dish until it is packed together but not too hard.
- Bake crust for 10 minutes. Set aside.
- In the bowl of a stand mixer fitted with the whisk attachment, whip egg yolks and zest for 2-3 minutes on medium-high speed.
- Add condensed milk and yogurt and mix for 2-3 minutes.
- With the mixer going on medium speed, slowly pour in lime juice. Continue to mix for 1 minute after all the juice has been added.
- Pour filling into prepared crust and bake for 25 minutes.
- Let pie cool for 15 minutes then refrigerate for at least 2 hours before topping with whipped cream and serving.
