Key Lime Pie

Ingredients

  • For graham cracker crust
  • 2 cups graham cracker crumbs (16 sheets)
  • 6 Tbsp butter (melted)
  • Pinch of salt
  • For filling
  • 3 egg yolks
  • 14 oz sweetened condensed milk 
  • 1/2 cup plain greek yogurt 
  • 3/4 cup key lime juice (or regular lime juice)
  • 1 Tbsp lime zest

Directions

  • Preheat oven to 325 degrees F. 
  • Crush graham crackers into fine crumbs and mix in a bowl with melted butter and salt until well combined.
  • Press crumbs into a 9” pie dish until it is packed together but not too hard.
  • Bake crust for 10 minutes. Set aside.
  • In the bowl of a stand mixer fitted with the whisk attachment, whip egg yolks and zest for 2-3 minutes on medium-high speed.
  • Add condensed milk and yogurt and mix for 2-3 minutes.
  • With the mixer going on medium speed, slowly pour in lime juice. Continue to mix for 1 minute after all the juice has been added.
  • Pour filling into prepared crust and bake for 25 minutes.
  • Let pie cool for 15 minutes then refrigerate for at least 2 hours before topping with whipped cream and serving.
