Loaded Banana Muffins
Banana, cinnamon, nuts, chocolate, and coconut all in one muffin!
Makes about 2 dozen muffins
Ingredients
- 1 1/2 cups whole wheat flour
- 1 1/2 cups all purpose flour
- 1 Tbsp baking powder
- 1/2 tsp salt
- 1 Tbsp cinnamon
- 3 eggs
- 1 cup melted coconut oil
- 1/2 cup honey
- 1/2 cup unsweetened applesauce
- 1/2 cup plain Greek yogurt
- 1 tsp vanilla
- 5 mashed ripe bananas
- 2 cups semisweet chocolate chips
- 1 cup shredded coconut
- 1 cup chopped pecans (or other nuts)
Directions
- Prepare muffin tins by spraying with nonstick spray. Set aside.
- Combine flours, baking powder, salt, and cinnamon in a bowl. Set aside.
- In a separate bowl whisk together eggs, oil, honey, applesauce, Greek yogurt, vanilla, and mashed bananas.
- Add dry to wet and stir with a wooden spoon to combine.
- fold in chocolate chips, coconut, and pecans.
- Scoop batter into prepared muffin tins, filling them almost to the very top.
- Let unbaked muffins sit while you preheat the oven to 425 degrees F.
- When oven is up to temperature, bake for 5 minutes then reduce oven temperature to 375 and bake for 10 minutes more.
- Let muffins cool for 5 minutes then remove from tins and place on wire rack to finish cooling.
