Loaded Banana Muffins



 Loaded Banana Muffins

Banana, cinnamon, nuts, chocolate, and coconut all in one muffin!

Makes about 2 dozen muffins

Ingredients

  • 1 1/2 cups whole wheat flour
  • 1 1/2 cups all purpose flour
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1 Tbsp cinnamon 
  • 3 eggs
  • 1 cup melted coconut oil
  • 1/2 cup honey
  • 1/2 cup unsweetened applesauce 
  • 1/2 cup plain Greek yogurt 
  • 1 tsp vanilla
  • 5 mashed ripe bananas
  • 2 cups semisweet chocolate chips
  • 1 cup shredded coconut 
  • 1 cup chopped pecans (or other nuts)

Directions 

  • Prepare muffin tins by spraying with nonstick spray. Set aside.
  • Combine flours, baking powder, salt, and cinnamon in a bowl. Set aside.
  • In a separate bowl whisk together eggs, oil, honey, applesauce, Greek yogurt, vanilla, and mashed bananas. 
  • Add dry to wet and stir with a wooden spoon to combine.
  • fold in chocolate chips, coconut, and pecans.
  • Scoop batter into prepared muffin tins, filling them almost to the very top.
  • Let unbaked muffins sit while you preheat the oven to 425 degrees F.
  • When oven is up to temperature, bake for 5 minutes then reduce oven temperature to 375 and bake for 10 minutes more.
  • Let muffins cool for 5 minutes then remove from tins and place on wire rack to finish cooling.
