Zucchini Bread
Ingredients
- 3 cups grated zucchini
- 1 cup granulated sugar
- 1 cup brown sugar
- 4 eggs
- 1 Tbsp vanilla
- 1 cup coconut oil (melted)
- 3 cups all purpose flour
- 1 tsp salt
- 1 Tbsp cinnamon
- 1/2 tsp ginger
- 1/4 tsp nutmeg
- 1/4 tsp ground cloves
- 1 tsp baking soda
- 1 tsp baking powder
Directions
- Preheat oven to 325. Grease two 8x4” loaf pans or 6 mini loaf pans.
- Mix flour, salt, baking powder, soda, and cinnamon together in a bowl.
- Beat eggs, oil, vanilla, and sugar together in a large bowl.
- Add dry to wet and stir to combine.
- Add in grated zucchini.
- Pour batter into prepared pans.
- Bake for 55 minutes for regular loaf pans, 35-40 minutes for mini loaf pans.
- Let cool for 30 minutes then turn out of pans to finish cooling.
Perfect for when you got zucchini you need to use and wanting something sweet!!
