 Zucchini Bread


Ingredients

  • 3 cups grated zucchini 
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 4 eggs
  • 1 Tbsp vanilla
  • 1 cup coconut oil (melted)
  • 3 cups all purpose flour
  • 1 tsp salt
  • 1 Tbsp cinnamon 
  • 1/2 tsp ginger
  • 1/4 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1 tsp baking soda 
  • 1 tsp baking powder 

Directions

  • Preheat oven to 325. Grease two 8x4” loaf pans or 6 mini loaf pans.
  • Mix flour, salt, baking powder, soda, and cinnamon together in a bowl.
  • Beat eggs, oil, vanilla, and sugar together in a large bowl.
  • Add dry to wet and stir to combine.
  • Add in grated zucchini.
  • Pour batter into prepared pans.
  • Bake for 55 minutes for regular loaf pans, 35-40 minutes for mini loaf pans.
  • Let cool for 30 minutes then turn out of pans to finish cooling.
