Chai Oatmeal Cookies
Makes 24 cookiesIngredients
- 2 sticks butter (melted)
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 1 Tbsp vanilla
- 1 tsp vinegar
- 2 cups all purpose flour
- 1 cup quick oats
- 3 cups old fashioned oats
- 1/2 tsp salt
- 1 tsp baking soda
- 1/4 tsp ground cardamom
- 1/4 tsp ground nutmeg
- 1/4 tsp ground allspice
- 1/4 tsp ground cloves
- 1/2 tsp ground ginger
- 1 tsp ground cinnamon
Directions
- In a large bowl, combine both sugars and melted butter and beat for 1 minute.
- Add eggs, vanilla, and vinegar and beat until well combined.
- In a separate bowl, combine flour, oats, salt, baking soda, and spices.
- Add dry ingredients to wet ingredients and mix until fully combined.
- Cover cookie dough and refrigerate for at least 2 hours.
- When ready to bake, preheat oven to 350 degrees F. and line baking sheet with parchment paper.
- Scoop and roll cookie dough into 2 Tbsp sized balls and place on prepared baking sheet.
- Bake for 10-12 minutes until center is no longer wet and the edges are just browning.
- Let cool on baking sheet for a few minutes then transfer to a wire rack to finish cooling.
I'm a sucker for oatmeal cookies and these are by far one of my favorite oatmeal cookie recipe!!
