Chai Oatmeal Cookies

 


Chai Oatmeal Cookies
Makes 24 cookies

Ingredients 

  • 2 sticks butter (melted)
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 Tbsp vanilla
  • 1 tsp vinegar
  • 2 cups all purpose flour
  • 1 cup quick oats
  • 3 cups old fashioned oats
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1/4 tsp ground cardamom 
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground allspice 
  • 1/4 tsp ground cloves
  • 1/2 tsp ground ginger
  • 1 tsp ground cinnamon 

Directions 

  • In a large bowl, combine both sugars and melted butter and beat for 1 minute.
  • Add eggs, vanilla, and vinegar and beat until well combined.
  • In a separate bowl, combine flour, oats, salt, baking soda, and spices.
  • Add dry ingredients to wet ingredients and mix until fully combined.
  • Cover cookie dough and refrigerate for at least 2 hours.
  • When ready to bake, preheat oven to 350 degrees F. and line baking sheet with parchment paper.
  • Scoop and roll cookie dough into 2 Tbsp sized balls and place on prepared baking sheet.
  • Bake for 10-12 minutes until center is no longer wet and the edges are just browning.
  • Let cool on baking sheet for a few minutes then transfer to a wire rack to finish cooling.
